About Carbone
Carbone opened at Aria in 2021 as Major Food Group's first Las Vegas location, following the Manhattan original's 2013 debut. Co-founders Rich Torrisi, Mario Carbone, and Jeff Zalaznick recreated their maximalist mid-century Italian-American format — red-jacketed captains, tableside Caesar preparation, a menu that leans heavily on veal parmesan, spicy rigatoni vodka, and lobster fra diavolo. The Aria location expanded the original Manhattan menu slightly and added more dining-room real estate, but the dress code, the prices, and the reservation difficulty all transferred intact. A second dining room, Carbone Riviera, opened at Wynn in 2023. Reservations open 30 days in advance at midnight PT. Dress code is strictly enforced: jackets are suggested for men, no athletic wear, no denim in the main dining room.
