CUT by Wolfgang Puck opened at The Palazzo in 2008 as the second CUT location after the 2006 Beverly Hills original. The Vegas dining room was designed by Tony Chi — warm-wood panels, leather banquettes, and open sightlines to a glassed dry-aging room. The menu runs a premium steakhouse template with Japanese influence: American wagyu from Snake River Farms, Japanese A5 from Miyazaki, bone marrow flan, and a signature veal-tongue dish that predates the steakhouse rotation most Vegas competitors run. Pastry program is as ambitious as the protein side. Casual elegance dress code — collared shirts, no athletic wear. Bar seating accepts walk-ins; reservations essential for the dining room.
